This 6-ingredient white chicken chili is an easy weeknight meal you can make in the crockpot, instant pot or stove top. It’s low in fat and high in protein and fiber. Best of all, it takes minimal prep to prepare.
I used chicken breast that I cooked for 20 minutes in the instant pot. After draining the chicken breast, I added the rest of the ingredients to the pot and cooked on the “soup” setting to warm it all up before serving. You could also use pre-cooked chicken or rotisserie chicken and save yourself a step.
I don’t have the official Instant Pot. I have a knockoff version, but it has worked just fine and was much cheaper!
For the crockpot version you can throw it all in the crockpot in the morning and let it simmer 6-8 hours. For the stove top, I would either cook the chicken first or use cooked chicken and heat it up all together.
If you like it extra spicy you can top it off with sliced fresh or pickled jalapeno peppers or throw in a little crushed or ground red pepper. You could also use the “spicy” Rotel as well. We keep ours on the mild side because our youngest isn’t quite into spicy foods just yet. Then everyone can customize their bowls to their own degree of spiciness.
6-Ingredient White Chicken Chili
Quick and easy weeknight meal that you could also double and freeze a batch for later. We love to take this camping for a warm filling meal.
- 1 lb chicken breast You could also use the meat from one rotisserie chicken
- 4 cans white beans, drained and rinsed
- 1 medium onion, chopped
- 1 can rotel
- 1 tsp cumin
- 4 cups chicken broth
- salt to taste, if desired
Cook chicken breast in instant pot (use "manual" setting and place chicken in pot with one cup of water for 20 minutes). Drain and shred chicken.
Add all ingredients including chicken back to the instant pot and cook on "soup" setting for apprx. 20 minutes.
Adjust seasoning and serve.
I like to serve it with a selection of toppings like sour cream, cheese, cilantro, avocado and sliced jalapeno peppers. Corn muffins or crusty bread round out the meal. It also makes great leftovers for lunches.
